Yan Ting review: This is my review of the Cantonese fine dining establishment at St. Regis Singapore. The husband and I made TWO trips here, and this was our wonderful experience.

On one of our visits, while deciding on the menu, we decided to order an appetiser first to share.

Cold and refreshing, without being too overpowering, we enjoyed the how light and slippery the jellyfish was.

Imagine the classic Cantonese Fried Rice in XO sauce, but upgraded to the highest level.

The rice here, hot and extremely well-fried, is cuddled by a thin egg-nest layer and topped with a huge serving of lobster – which was of course, sweet and juicy.

Slightly oily – but as that is expected of GOOD fried rice, do be prepared for a little grease if you decide to go with this!

If you dislike the oilyness of fried rice but still love rice and seafood, a great alternative is this healthier counterpart: the Crispy Rice with Alaskan Crab Meat and Lobster Broth.

Crispy Rice with Alaskan Crab Meat and Lobster Broth

Resembling what we locals call the Pao Fan (literally Rice Drowning in Soup), the idea is that the plain rice would absorb whatever soupy goodness presented, and in turn become flavourful in itself.

At Yan Ting, the crispy rice definitely absorbs the goodness of lobster broth. Top it up with Alaskan Crab Meat and you have a winner right there.

I’ve always loved the kick of chinese pepper, so when we saw the Claypot Baked Shrimps and Glass Vermicelli with Black and White Pepper on the menu, it immediately became a Must-Try.

Warning: extremely peppery. This is one of the dishes where you either you love it or hate it. Seasoned primary with Chinese Black and White Peppers, both the shrimp and vermicelli clears one’s airways and nostrils.

There is also a strong peppery-aftertaste that does not dissipate easily even with water and chinese tea. We loved that feeling – but for the less pepper-inclined, it could be a deal breaker.

Meat, Tofu, Vegetables

In this Yan Ting review, one of the things I love is that customers can customize the preparation of some vegetables dishes.

Here, diners can choose one of these vegetables: dou miao, asparagus, kai lan, choy sim, brocolli, green dragon, baby spinach, spinach, and leaf lettuce.

Followed by choosing a method of preparation: stir-fried (plain), stir-fried with garlic, stir-fried with XO Sauce, poached with tomato broth, stir-fried with salted fish and dried shrimps, and stir-fried with fermented beancurd.

Baby Spinach: Stir fried with Garlic

Well-fried and garlicky, the dish still preserved the taste of fresh baby spinach. So simple, but so well-done.

The other meat, vegetable or tofu dishes we ordered were straight from the menu (not customized).

Poached Beancurd with Preserved Pork and Dried Shrimp

Yan Ting does tofu really well, so if you want something less mainstream, try one of their tofu dishes; the server claimed that many of their tofu is made on-site as well.

We decided to try the Poached Beancurd with Preserved Pork and Dried Shrimp.

Savoury and not too overpowering; the flavours from the pork and shrimp made the broth super thick and flavourful, and the silken tofu just complements it beautifully.

Another recommended Tofu dish is the Braised Shunde Fish Tofu with Dried Fish Maw and Cabbage.

Compared to the other tofu dish, this one is more gentle and soothing. Soft and chewy nappa (chinese cabbages), that have fully absorbed the broth, along with the Fish Maw providing an extra texture – it really elevates the overall dish.

Here’s something worth considering: Braised Wu Xi Pork Rib with Homemade Chinese Wine.

Note that “Rib” is singular.

This is not immediately obvious in pictures, but the single lone rib was HUGE.

Takes up a huge space on the plate

The meat was almost fall-off-the-bone tender. Extremely juicy and velvety rich – every sinful bite was worth the calories.

If i were asked to recommend a meat dish, it would be a tie between the rib above and this one: the Claypot Stewed Chicken in Yellow Rice Wine.

This is the PERFECT dish to have on a cold, rainy day… or if you just want the most comforting soup possible. While not technically categorised as a soup dish, the broth here is so rich, so thick, and carries the amazing aftertaste of chicken cooked in chinese wine. The alcohol feeling warms up the body and soul; every bite of chicken oozes chinese wine and… yeah it is practically unrivalled.

Genuine words of advice: don’t skip out on dessert at Yan Ting.

Chilled Panna Cotta served in Whole Coconut

To date, my favourite dessert at Yan Ting is the Chilled Panna Cotta served in Whole Coconut.

I am a huge coconut lover; it is one of my favourite foods (and is my favourite ice cream flavour). I might be slightly biased with the Yan Ting review here – but God, I went crazy over this one.

Smooth, milky Panna Cotta just ends a meal nicely. After that, scrape up the coconut shell and enjoy the coconut flesh.

Note: the Panna Cotta served in Whole Coconut is not to be confused with the Chilled Coconut Puree – another worthy rival. The Puree is more liquidy and maintains the original taste of coconut more strongly, while the Panna Cotta is more of a milk curd and more creamy, and the coconut is more of a background taste.

Another dessert we tried was the Nourishing Herbal Jelly.

Nourishing Herbal Jelly

Known in Chinese as Guilinggao (龟苓膏), the dish is simple but extremely popular with diners. Bittersweet black herbal jelly is served with honey drizzed on. While it is wildly loved by many, for those not used to herbal jelly – it may be a bit of an acquired taste.

And then, there is the very idiot-proof Chilled Mango Sago Cream with Pomelo. If you want a dessert, and don’t know what to go for (or are unwilling to be adventurous), the safest option is always Mango Sago. The one here was good but not particularly outstanding. Especially when all things considered, there are so many other desserts to go for.

All in all, in this Yan Ting review, we had a very wonderful experience. Service was awesome, the food even better, and the ambience was elegant. Hands down one of the best Cantonese fine-dining places in Singapore, and 10/10 would recommend it to anyone.
