This is my second SKAI review. My first SKAI review on this blog was written over two years ago, in 2020. Previously, I visited SKAI just before the COVID19 lockdown befell Singapore.

SKAI Restaurant at Swissotel the Stamford: a review

Two years later, the menu is revamped, but the meal is equally impressive, if not more.

SKAI is a contemporary dining establishment at Swissotel the Stamford. Located on the 70th floor, it boasts amazing view of the City Hall area in Singapore.

And this SKAI review comes from TWO vistations there.

I’ll never get tired of this view

It is said that first impressions matter. SKAI wows the visitors at the entrance. High expectations are set right from the start.

For one of our dine-ins, we were seated right by the floor-to-ceiling glass windows. If you really wish to dine right by the views – be sure to make a reservation and request for it during reservations. In my personal experience at least, SKAI might not promise it but they would take your wishes into account.

For fun’s sake, here’s my bag of the day.

Bread Basket and Starters

We made our orders quickly. Meanwhile, a server brought some freshly baked buns with mushroom butter.

The mushroom butter was as unique as I’ve remembered. I’ve described it as the King of Vegetable Butters – slightly complex the smooth spread on warm crusty bread was savoury and sophisticated, while still maintaining a basic buttery goodness.

Spreading it out

For both my visitations to SKAI, the food took a while to arrive. But given that it’s usually crowded, the wait was not unreasonable. 

The starters usually arrived within 20 minutes.

Crab Cakes

When we asked the server to recommend a starter, the Crab Cakes is their suggested go-to. Sweet and flavourful, it is served with bits of romanesco, chilli, on a bed of daikon salad. The amount of crab meat here was fairly generous as well.

For a more unique starter, try the Scallop and Salmon Tartar. Here, smoked aioli, and yuzu flavouring graced the raw seafood beautifully. Topped with a crunchy tempura anchovy, the mix of crispy and raw seafood gave an exciting texture overall.

For something more local or closer to home, the Crispy Tofu is a unique take on the simple tofu. White miso, cabbage, kembu and radish come together and uplifted the traditionally plain tofu – the flavour feels almost curated here. Lovely.

Mains

Not to be outdone, the mains were equally unique and impressive on their own.

Grilled Lobster (Crab Squid Ink Spaghetti)

On the menu, this is named the Grilled Lobster, but its really a squid ink spaghetti tossed with bonito, garlic, and caper oil, and topped with a sweet grilled lobster and a crab claw.

For the Crustacean Lover

Alternatively, SKAI has a really good steak.

Westholme Wagyu, Flat Iron

The menu describes the steak as served with a house salad and Asian spices. Don’t be fooled by the deceptively simple wording – the green sauce (mint sauce, I think) added a real sharpness to the steak and gave it an extra oomph. I can recommend this – satisfying and richly flavoured, the tender meat is just pure joy in the mouth.

If one prefers something lighter and fresher, the simple Black Cod would not disappoint.

Impressively, when the dish shows up, the servers immediately drizzle some clam butter over the fish.

The cod itself, cooked in seaweed, is light and melt-in-your-mouth tender. It went well with the green pea gnocchi; despite the gnocchi being a carbohydrate, the whole dish didn’t feel heavy at all.

I’ve also tried the Rhug Organic Lamb Rump, and its presentation was as majestic as the other dishes. The dish arrived, and again sauce was poured over.

Low in carbs, this dish looks keto-friendly (but don’t take my word for it for sure – i’m not an expert!) Fresh lamb shoulder, that wasn’t gamey at all, went well with spiced curry sauce and a medly of colourful cauliflowers. We oooh-ed at the purple one, just cause it was so pretty. Hahaha.

Do note that the serving sizes are light / average, and aren’t large at all. If one is a big eater, a bit of a sides top-up might be necessary. I love the Asparagus here – tossed in rapeseed oil and yuzu, the vegetable felt super light and fresh. Or, let it go and pilevon the carbs with the Hand-Cut Chips. Those were well fried and super addictive.

Desserts

In this SKAI review, I declare that desserts are a MUST HAVE.

Chocolate Tart

Take the Chocolate Tart for instance. Served with orange confit and an ice cream on the side, the chocolate is rich without being too heavy.

The Amber Peace is a serious eye-catcher.

Easily the most instagrammable dessert here, the honeycomb biscuit rests atop a fresh scoop of yogurt ice cream, cream fraiche honey mochi, and peach slides.

The yogurt ice cream completely blew us away. Slightly sour, endlessly creamy with a tinge of sharpness, it constrasted with sweet peaches and a honey-flavoured biscuit. We couldn’t get over how the biscuit was so beautifully shaped in a honeycomb; it was almost too pretty to eat.

The show has started

A bed of dry ice going through the sublimation process came forth. A cool mist filled the space. When the cloudy mist slightly cleared, it revealed a bowl of Strawberry Trifle.

Though, with all the mist, it’ll be impossible to dig in immediately. Wait a little more.

This dessert is ice-cold. Strawberries and jelly bits, infused with lemongrass, comes with a herby basil sorbet.

I have not met a more elegant dessert. 

Complimentary Cake or Wine from Amex

With the American Express Platinum Charge card, card holders get a bunch of vouchers upon payment of the card’s annual fees every year. One of the vouchers is this one.

For one of my visitations, I decided to redeem a cake (you will need to call about 2 working days in advance), and was given a choice to redeem either a chocolate mousse cake or a yuzu one.

On the other visitation, I decided to go for the bottle of wine instead. There is a choice to go for a red or white option.

These extra things from American Express is just the little extra icing on the cake. It’s one of the reasons why I love the Platinum Charge card so much – you can’t help feeling that Amex tries to go the extra mile to make your dining experiences special.

General thoughts

Modern, fusion, complex, unique – these words come to mind when exploring the contemporary cuisine at SKAI.

If you want something that is different and non-mainstream, something that surprises – SKAI is a great place for that.

What SKAI is not, however, is traditional. You won’t find a typical mainstream burger or fish and chips here. Hence, if you prefer predictable, ubiquitous, idiot-proof food, SKAI might not be ideal – the fare here is adventurous and meant for exploration. 

Service staff were friendly; however with the easing of covid19 measures, it was evident that everyone was busy, so the staff might not have been as attentive as they would have liked to. 

Otherwise, generally positive experiences here, and 10/10 highly recommended.
